Condenser restricts the flow of refrigerant to the evaporator to be able to lower the saturated evap temp to about 28 degrees, so that when the air touches the coil it condensates , increasing the de-humidification. Once the unit notices the coil gets too cold it will start to stabilize and increase in temperature. And then drop once more from there.
